Opinions are like....well, you know the rest.

I am willing to bet most of the people who agree that it should not have won never even played the game.

I have not played Super Mario Odyssey yet, but between Horizon, Persona 5, and Zelda, I would not be mad at any of those games taking game of the year. Zelda was great. I completely disagree in saying that it's a step back in most Zelda elements. If anything, it took the original formula and expanded it. People harp on Nintendo for using the same IPs over again, yet they took the time to really reinvent Zelda and it paid off.

Do not be sour. Just disagree. You do not have to berate what was a very memorable title just because you did not want it to win. Every year, there are detractors over what should have won. Was Zelda *my* Game of the Year? No, but I can definitely see why it won. Again, if any of those games you listed got it, I'd be content.

These awards are opinion-based. There is no factual basis to what is entitled to win; in principle, the winner of GOTY does not even have to be a good game--it just needs to be not as bad as the others. As it turns out, this was an incredibly strong year for software and Zelda beat it out. And that's the opinion of more people than you or me. Just accept it and be graceful.
